wash and trim the scraggly bits of your brussel sprouts, rinse and then quarter them.

lay them on a aluminium-lined baking sheet coated with your oil of choice – I used toasted sesame oil – and throw on garlic slivers. season with lots of soya sauce, and throw it into the oven at 250C for about 10 minutes, or until beautifully charred and caramelized.

eat.
